The staff restaurant makes a lot of extra effort to put sustainable fish, from Belgian fishermen, on the menu. Especially for the occasion, North Sea Chef Pieter Lonneville stopped by to prepare a fish menu with the kitchen team. 'Visserij Verduurzaamt' is an initiative in the Belgian fisheries sector that, since June 2018, awards recognition labels to shipping companies committed to sustainability. This label becomes visible at auctions and indicates whether a batch of fish meets the minimum sustainability standards and whether the fishery is actively working on further improvements.
Currently, 53 Belgian fishing vessels and 11 operators, including restaurants, fish wholesalers and fish processing companies, have received the recognition, while 11 others are in the process of obtaining it. The provincial restaurant has been serving sustainable food for many years.
